Research interests

Saliva secretion and function in health and disease with an emphasis on taste and mouthfeel.  Mouthfeel in relation to interactions with foods and drinks but also with reference to oral dryness caused by irradiation, medications or diseases (such as Sjögren's syndrome).  In particular the proteins the ions that make up saliva are key to understanding its interactions with surfaces in the mouth (mucosa and teeth) but also with microbes normally present in the mouth.
